BBQ Sweet Potato Nachos

Need a quick and easy paleo dinner? Grab a bag of coconut oil fried sweet potato chips, top them with pulled pork or pulled rotisserie chicken, some sliced jalapeños, diced red onion, cilantro, and some BBQ sauce for one delicious meal!

 

BBQ Sweet Potato Nachos

1 bag sweet potato chips

8 ounces pulled pork or shredded rotisserie chicken

1 jalapeno, thinly sliced

3 tablespoons diced red onion

2 tablespoons minced cilantro

¼ cup BBQ sauce

 

Toss the meat with the BBQ sauce. Top the sweet potatoes with meat, jalapeno, onion, cilantro, and extra BBQ sauce if desired. Serve immediately.
