Paleo Stuffed Green Peppers

Scott and Whitney from He and She Eat Clean incorporated our ginger cilantro dressing into their Paleo version of stuffed green peppers! The recipe is quick, simple and delicious.

Instead of rice and beans, they suggested combining their honey ground chicken recipe with leafy green vegetables like kale, spinach or romaine lettuce for an extra dose of micronutrient such as iron and Vitamins K, A, and C.

Top the cooked peppers with guacamole (who doesn’t love guac?) and our PaleoChef Ginger Cilantro and it’s a meal made in heaven!

1 lb ground chicken (or your choice of meat) + ingredients used in this Honey Chipotle Ground Chicken recipe
3 green bell peppers
1 avocado or guacamole
Chopped greens (spinach, kale, etc)
1. Preheat oven to 350 degrees
2. Brown the chicken using our Honey Chipotle Ground Chicken recipe
3. Wash and cut the green peppers
4. Stuff the peppers with cooked meat and shredded greens
5. Cook stuffed peppers for 20 minutes
6. Top with avocado or guacamole and cover with Paleo Chef Ginger Cilantro
