Paleo Pumpkin Protein Pancakes

  • ½ cup almond flour
  • 3 tablespoons coconut flour
  • ½ cup unsweetened pumpkin puree
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • Butter, for cooking


  1. In a medium bowl, mix together all of the ingredients until smooth. Heat a bit of butter in a nonstick pan over medium-low heat. Place ¼ cup of batter into the pan and cook until bubbles form at the edges. Carefully flip and continue to cook 1-2 minutes. Repeat with the remaining batter and serve.
