Paleo Pumpkin Protein Pancakes

Ingredients:
- ½ cup almond flour
- 3 tablespoons coconut flour
- ½ cup unsweetened pumpkin puree
- 4 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- Butter, for cooking
Directions:
- In a medium bowl, mix together all of the ingredients until smooth. Heat a bit of butter in a nonstick pan over medium-low heat. Place ¼ cup of batter into the pan and cook until bubbles form at the edges. Carefully flip and continue to cook 1-2 minutes. Repeat with the remaining batter and serve.
