Toasted Granola Sweet Potato Wedges

INGREDIENTS:

  • 2 sweet potatoes, cut into wedges
  • 1/3 cup Steve’s PaleoKrunch (broken into small pieces)
  • 2 tablespoons coconut oil
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cardamom

 

DIRECTIONS:

Preheat oven to 425 and line baking tray with parchment paper.

In a large bowl, combine sweet potatoes and coat with coconut oil, granola and spices.

Add to tray and bake for 30-35 minutes.

Broil for 2-3 minutes then enjoy!
