1/2 lb. chopped bacon
1/2 chopped red bell pepper
1/2 chopped onion
Handful chopped spinach
2 medium sweet potatoes, grated
Add bacon, bell pepper, onion to frying pan. Cook on medium heat until bacon and vegetables start to brown. Add grated sweet potatoes and spinach. Cook for approximately 5 minutes, until the potatoes start to brown. Carefully crack eggs on top of hash and cover with lid until eggs are cooked. For soft yolk – approximately five minutes.
