2 handfuls of spinach (or lettuce of choice)
1/2 cup sliced bell peppers
1/2 sliced mushrooms
1 grilled Steve’s filet mignon (cooked to your liking)
In a frying pan, sautée mushrooms and peppers in olive oil until they are starting to brown. Set aside.
Add spinach to salad bowl, then add cooked mushroom and peppers, top with sliced steak. Then drizzle with avocado mayo dressing.
1 heaping tbsp. avocado mayo
Drizzle of olive oil
Juice from half a lime (keeping remaining half to drizzle on salad)
1/2 tsp. taco or chipotle seasoning
Add all ingredients and mix until desired consistency of dressing. You may need to add more juice or oil to get the desired consistency. Drizzle over salad then squeeze juice from remaining half of lime on salad. Enjoy!!!
