Sausage and Veggie Stir-Fry over Cauliflower Rice

1/2 onion, diced
1/2 cup cubed butternut squash
1/2 cup chopped broccoli
1/2 cup chopped asparagus
1/2 chopped Brussel sprouts
2 to 3 sausage links, sliced thin
2 tablespoons avocado mayo
3 to 4 cups cauliflower rice
Olive oil or ghee

Sauté onions, cubed butternut squash, broccoli, asparagus and Brussel sprouts in olive oil or ghee until tender. Add sausage and brown. After browning, add avocado mayo, salt and pepper and serve over riced cauliflower. Your family will love you for this dish. 💕
