Roasted Red Pepper Tomato Curry Soup

This easy Paleo Instant Pot Roasted Red Pepper Tomato Curry Soup is totally easy to make with only 6 ingredients!

 

Roasted Red Pepper Tomato Curry Soup

Serves: 4

Prep:  5 minutes

Cook: 7 minutes

1 (28-oz) can whole tomatoes, undrained

1 (12-oz) jar roasted red peppers, drained (drained wt.7.75oz/220g)

1 cup vegetable broth

1 can coconut cream

1 tablespoon curry powder

Cilantro, to serve

Place the tomatoes, red pepper, vegetable broth, coconut cream, and curry powder into the Instant Pot and set to manual high for 7 minutes. Manual release the pressure at the end of the 7 minutes then use an immersion blender to puree the soup. Top with cilantro and serve.
