Roasted Eggplant Pizza


1 eggplant, cut lengthwise

Nitrate-free pepperoni

Sugar-free spaghetti sauce

Kite Hill Foods ricotta cheese

Fresh basil

Olive oil


Preheat oven to 350. Brush eggplant with olive oil coating both sides. Roast until eggplant starts to brown, then flip and continuing roasting until the flip side browns. Remove from oven. Add spaghetti sauce, pepperoni, almond cheese and basil. Return to oven until cheese starts to melt.
