These easy Paleo Chicken Nuggets are great for kids and adults alike. They’re delicious when dunked into our Ketchup, Maple Mustard, or Peach BBQ sauce!
Paleo Chicken Nuggets

- ½ cup pickle juice
- 1 lb chicken breast, cut into 2” pieces
- 1 egg
- ½ cup coconut flour
- ½ cup oil
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon pepper
- Place the chicken in a ziploc bag or lidded container with the pickle juice and marinate for 30 minutes-1 hour.
- Heat the oil in a large skillet over medium-high heat.
- Drain off the pickle juice, then dip the chicken into the egg, then dredge through the flour mixture. Add the chicken to the pan, making sure not to overcrowd the pieces: you’ll need to work in batches. Cook for 3-4 minutes per side until golden brown and cooked through. Serve immediately or freeze for later use.
