PALEO BREAKFAST NACHOS

 

INGREDIENTS
2 ripe plantains sliced
1 lb. ground sausage browned
4 eggs scrambled
1 bell pepper
1/2 cup mushrooms
Steve’s PaleoGoods Coconut Oil
Salt
Pepper
1/2 avocado cubed
Fresh cilantro
RECIPE
Add oil to frying pan, add plantains and fry on medium heat turning when they start to brown, repeating on the other side. Remove from oil and place on paper towel.  Add peppers and mushrooms to oil and sauté until browned. Then assemble the nachos, sausage, scrambled eggs, peppers, mushrooms and avocado. Garnish with fresh cilantro.
