Granola Crusted Paleo French Toast


  • 6 slices paleo bread (we used Barely Bread)
  • 4 eggs
  • 3/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 8 ounces Steve’s PaleoKrunch (any flavor)
  • 1 pint berries
  • maple syrup
  • butter or coconut oil for greasing


  • Preheat large skillet or griddle over a medium heat with butter or coconut oil
  • Place the granola in a food processor or blender and pulse to smaller pieces, then place onto a large plate or shallow bowl
  • Whisk together the eggs, milk and vanilla in a large bowl.
  • Grease the skillet, then dip one piece of bread into the egg mixture, let the excess run off, then coat in the granola
  • Place the coated bread onto the skillet and cook for about 3 minutes per side until slightly browned
  • Transfer to plate and repeat with remaining slices of bread
  • Serve French toast with berries and maple syrup
