EGG AND VEGETABLE ROUNDS

INGREDIENTS 
1 1/2 cup chopped broccoli
1/4 cup diced orange pepper
1/2 cup diced mushrooms
4 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
Dash of garlic powder
Olive oil
RECIPE
Add a few swirls of olive oil to frying pan. Add broccoli, peppers and mushrooms, salt, pepper and garlic powder. Cook for approximately ten minutes, tossing occasionally. Mound vegetables in four patties, making a well in the top of the mound. Add an egg to each patty and cover. Cook for approximately 10 more minutes until egg is desired consistency (longer for harder yoke). Garnish with bacon bits.
