Creamy Pumpkin Mousse with Cinnamon Swirl Crumble

Serves: 2

Ingredients:

  • 1/2 cup pumpkin puree
  • 1/2 cup coconut manna (or coconut butter)
  • 1/4 cup full fat canned coconut milk
  • 2 tbsp coconut oil, melted
  • 2 tbsp sunflower seed butter (or almond butter)
  • 2 tbsp pue maple syrup
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • sea salt to taste
  • 1/2- 1 cup Cinnamon Swirl Paleo Krunch Cereal

Process:

  1. Combine all ingredients besides cereal in a small bowl, “whipping” together until a creamy mousse forms.
  2. In small cups, layer mousse and cereal as desired.
  3. Chow. Down.
