CHILLED AVOCADO SOUP

INGREDIENTS:

2 1/2 cups sparkling water

3 ripe diced avocados

1 cup unsweetened almond milk or almond milk yogurt

1/4 cup fresh basil, chopped

1 tbsp. apple cider vinegar

1 tsp. lime zest

2 tbsp fresh lime juice

Salt and pepper to taste

Sliced radishes (for garnish)

RECIPE:

Combine sparkling water, avocado, almond milk, basil, vinegar, lime zest, lime juice, salt and pepper, blend with an immersion blender until smooth. Chill for 30 minutes. Garnish with sliced radishes and a squeeze of lime. Add more salt after tasting.
