2 Steve’s Chicken diced
1/2 onion diced
1 whole bell pepper diced
7 or 8 grape tomatoes diced
Handful of chopped spinach
Taco or chipotle seasoning
Steve’s PaleoGoods Sriracha Sauce
1. Preheat oven on 350
2. Add chicken, onions and peppers to roasting pan, drizzle with olive oil. Cook on 350 until the chicken is almost done.
3. In greased muffin pan add chicken, onions, peppers, spinach and tomatoes.
4. Mix eggs and seasonings. Pour over chicken in muffin tins. Cook on 350 for approximately 15 minutes or until toothpick comes out clean.
5. For an extra kick, garnish with Steve’s PaleoGoods Sriracha Sauce.
