Asian Salad with Ginger Cilantro Dressing

INGREDIENTS:

2  Summer squash (sliced thin)

8-10  mushrooms (sliced thin)

1/4 onion (sliced thin)

1/2 head chopped red cabbage

1 cup chopped spinach

Salt

Pepper

Garlic

Asian spice (optional)

Steve’s PaleoGoods Ginger Cilantro Dressing

Green onions (optional garnish)

Olive oil

RECIPE:

Add a few swirls of olive oil to frying pan. Add squash, onions, mushrooms, cabbage and spinach. Cook on medium heat until they get start to brown. Add seasonings. Remove from heat and drizzle with dressing. Garnish with green onions. Can be served hot or cold.
