Strawberry Pecan Chia Pudding

Overnight breakfasts are all the rage, you put in a little effort on one day then you have an effortless breakfast for the next or even a few days after.

This Strawberry Pecan Chia Pudding is one of my favorite overnight breakfast options. With just four ingredients: strawberries, chia seeds, pecan milk, and maple syrup, this recipe takes mere minutes to throw together.

For the pecan milk, you can use either a store-bought variety or a homemade one. If you opt to make a homemade version, all you’ll need is a cup of pecans and some filtered water. It’s as easy to make as almond milk, and you can also opt to add some vanilla, maple syrup, and a pinch of salt to jazz things up a bit if you want.

To make the little parfait jars, you’ll blend the pecan milk, chia seeds, and maple syrup together (note: if you’re using store-bought pecan milk then it is probably already sweetened, so be sure to do a quick taste test to determine if you’d like more).

If you’d like to parfaits to be layered, simply fill the jars with the plain chia pudding,

then blend in the strawberries to the remaining mix, then layer. To help the layers not merge together, you may opt to place the jars in the freezer for a few minutes to firm up. You can also just opt to blend the strawberries in at the beginning and not worry about layering…#easy.

For the topping, I used Steve’s PaleoGoods Dried Strawberries. These little gems are bursting with sweetness and they complement the creamy chia pudding perfectly. You can also sprinkle some crushed pecans across the top too if you wish. Anyway you choose, these are sure to be delicious!

Strawberry Pecan Chia Pudding

  1. To make layered parfaits, blend together the chia seeds, pecan milk, and maple syrup in a blender. Pulse a few times to combine. Let sit for 5 minutes to thicken. Fill half of 4 (7 oz) jars with the plain chia pudding, place in freezer for 15 minutes to set.
  2. Blend in the fresh strawberries to the remaining mix and pour over the plain layer. Refrigerate overnight.

Before serving, top with Steve’s PaleoGoods Dried Strawberries
