Sticking to a Paleo diet takes some work and preparation, but it doesn’t have to mean giving up foods that have been favorites for years. Comfort foods like street tacos just take a little more consideration–like finding your favorite brand of almond flour tortillas or making your own at home.
Tacos are great because there are endless flavor options from using different proteins to changing up your toppings. So, find the combinations that work best for you or create a taco bar that allows everyone to get creative.
Steve’s Ginger Cilantro Salmon
Red Bell Peppers
Almond Flour Tortillas (optional)
Butter Lettuce Cups (optional)
In a large pan, sauté cabbage with EVOO (Extra Virgin Olive Oil) until just soft (about 10 minutes over medium heat). Add in peppers and onions. Cook until softened and season evenly with Adobo Seasoning. Set aside.
Prepare salmon according to package directions. When cooled enough to touch, separate with a fork. Spoon salmon evenly over the tortillas or into the lettuce cups. Top with cabbage mixture and jalapenos. Add additional toppings as desired.
PALEO or NO? Traditional tacos are definitely not paleo friendly, from processed cheese to flour tortillas. However, there are plenty of alternatives that let you enjoy comfort foods without falling off the wagon. So, stock up on almond flour and get back to your favorites!
