The Paleo and Mediterranean lifestyle intersect often, with proteins and healthy fats dominating the menu. So, it comes as no surprise that traditional Mediterranean flavors lend themselves well to Paleo recipes.
Sweet and tangy Maple Mustard Salmon is balanced by sweet cranberries and tangy sundried tomatoes in this recipe to create the perfect Mediterranean bite.
2 portions Steve’s Maple Mustard Salmon
2 Tbsp Chopped Shallots
1 Tbsp Minced Garlic
2 tsp Minced Fresh Thyme
2 tsp Minced Fresh Oregano
2 Tbsp Roughly Chopped Pecans
¼ Cup Dried Cranberries
¼ Cup Chopped Sundried Tomato
1 Cup Prepared Quinoa (optional)
In a large pan, sauté shallots and garlic with EVOO (extra virgin olive oil) over medium heat until soft. Season with thyme and oregano. Add pecans, cranberries and sundried tomato and stir until cranberries are plump.
Combine with prepared quinoa if desired. Prepare Maple Mustard Salmon according to package directions. Serve salmon over nut and berry mixture. Top with additional nuts and berries.
PALEO or NO? While quinoa isn’t technically a great, it is a wheat product that contains many grain-like properties. As a grain alternative, if you can’t do without, quinoa is a viable choice. However, many people still have issues processing and digesting quinoa. For those people, it is probably best to avoid it altogether.
