1 acorn squash, cut in half and scooped out
1 lb. Steve’s Grass-fed beef or bison
2 cups mixed vegetables (shaved brussel sprouts, diced mushrooms and peppers)
2 tbsp. avocado mayo
Place acorn squash halves upside down in a glass roasting pan with approximately an inch of water. Microwave on high for 5 minutes (until fork tender).
Add a few swirls of olive oil to frying pan on medium heat, add mixed vegetables, salt, pepper and garlic powder sautéing until tender. Move vegetables to the side and add beef/bison to the same pan. Cook until brown. Add mayonnaise to pan and mix well. Spoon mixture into acorn boats and serve immediately. Garnish with thyme.
